Yes and no.

When you use default.php the override will apply to all default article pages.
When you want specific articles from a blog or list to have an override, you need to give it a different name.

Give the file a simple name. I.e. food.php, fish.php
You cannot use special characters, so no dashes, underscores, etc.
(whateveryouliketonameit.php is a correct name too)

You then select this override in your category blog/list menu item, under Options: Choose a layout.
All articles linked from this menu item will use the override.


When you want an override for a specific article page, you also need an override for the Single Article menu item.

Create/copy the .xml file with the same name as the override file. I.e. food.php and food.xml

Edit the xml file to change <layout title=... option=...> and <message> so you can easily find it again within Joomla.

This now works the same as the default Single Article menu item.
Create a new menu item, at select menu item type select your override and select your article.
